A large white root, with the nutty taste
of carrot. Yet parsnip and carrot are not
related. But parsnip is used in the same
way as a carrot: In stew, mashed potatoes or soup.

history of the parsnip
In ancient Egypt parsnip was an important
crop. It was widely used by the Teutons.
parsnips in medieval
Parsnip was eaten a lot during the Middle Ages.
From the 16th century, parsnips became very popular
in England. With the advent of the potato
parsnip disappeared into the background.
Parsnip was found in the stew that was used by
the Spain soldiers during the Relief of Leiden
(3 October)
parsnip and carrot
The carrot grows faster than parsnips,
carrot does have 150 days to mature,
parsnip about 200. It is mainly this advantage
why the carrot has repressed the parsnip.
Parsnip at the beginning of summer.
parsnips in the garden
Parsnip is much more resistant to cold than
the carrot. Sow parsnip at the end of April.
Parsnip germinates slowly, and the weeds will
replace them. Therefore it is important to
properly and precisely to sow in a gully because
hoeing will become difficult.
Parsnip is flowering at the end of summer.
It can then be harvested until the
late winter.
seeds of parsnip
Parsnip has large flat seeds compared
with other Umbelliferae: You have to
sow parsnip deeper, one inch is good.
Seed can also choose from dried flowers
obtained.
Parsnip has not a very long shelf life,
though after one year storage, the
germination will become difficult.
rows of parsnip
Keep at least thirty inches between rows
and more than a few inches between plants:
parsnip uses a lot of space.
harvesting parsnip
Harvesting can be done all winter and this may
makes it ideal for your vegetable garden:
it only needs to be harvested if
it is needed.
