A large white root, with the nutty taste
of carrot. Yet parsnip and carrot are not
related. But parsnip is used in the same
way as a carrot: In stew, mashed potatoes or soup.

In ancient Egypt parsnip was an important
crop. It was widely used by the Teutons.

Parsnip was eaten a lot during the Middle Ages.
From the 16th century, parsnips became very popular
in England. With the advent of the potato
parsnip disappeared into the background.
Parsnip was found in the stew that was used by
the Spain soldiers during the Relief of Leiden (3 October)

The carrot grows faster than parsnips,

    500 g potatoes
    1 kg parsnips
    3 dl milk
    butter
    nutmeg
    Let the potatoes boiling 10 minutes, then add the
    parsnip. Start crushing and add butter
    and milk at the same time.
    variations: with smoked sausage, beef or bacon.
    With an onion, fry it or cook.
    With carrots, which are then cooked with parsnips.
    Sprinkle it with parsley.
