Wild musterd or Charlock


A strong field plant that has the capability to color
a field yellow while in blossom. That blossom period
is long as it starts in spring and ends in fall.
Field mostard attracts a lot of honey bees.

There are leafy clusters of flowers, each flower has
four bright yellow petals.

The fruit of charlock is a silique 3 cm long
with a beak 2 cm long, making it easely to
differentiate from rapeseed. The seeds of Charlock
can survive for years in the ground making
them hard to remove.

the uses of Charlock


The young leaves of Charlock can be eaten directly
in salads. Older leaves need to be cooked shortly.
The seeds can be used for the production of Mustard,
but this mustard is not really tasteful.












    Mustard

    Mustard is produced by adding water to the seeds of
    the black and brown or yellow mostard.
    Except for the production of mustard one can
    use the seeds for the conservation of vegetables
    in pots, mustard seeds are added directly to
    enhance the taste.


    Mustard seeds
    1 Wild mustard or Sinapis arvensis produces yellow seed
    but is not a very good ingradient for mustard production.
    Wild mustard can be found in the verge of the road.

    2 Black mustard or Brassica nigra is the best mustard seed,
    but these seeds can only harvested by hand. The seeds
    are very small, and fermentation of these seeds
    gives a very sharp mustard.

    3 Brown or Chinese mustard or brassia Juncea
    This mustard is the one that is most used,
    as it can be produced easely and harvested
    by using machines. These are the seeds widely
    used for the production of Dijon mustard.
    4 White or yellow or Sinapsis alba
    An annual weed that is most widely used as
    an food for cows, but it is also use for
    the production of mustard seeds
    5 Rapeseed or Brassica napus is a close relative
    of the mustards but can't be used for mustard production.
